The Taco Chain Building a Disability-Inclusive Culture

Derek Gonzalez opened Pilo’s Street Tacos in 2017 as an homage to his late Aunt Pilo and the tacos she made in Mexico. Today, Gonzalez owns seven restaurants and bars in Miami, employing more than three dozen people with disabilities just like Pilo, who had Down Syndrome. 

“Pilo has been my guardian angel since the day I was born,” Gonzalez said. “So it’s important for me to share that with the world.”
